Ingredients
  

  • 2 large tomatoes sliced
  • 9 oz chicken thigh skinless, organic
  • 1 tbsp dried herb
  • 2 tbsp olive oil
  • 1/2 cup green peas
  • 1 cup lettuce chopped
  • 1 cup quinoa
  • 1 cup chicken broth low salt

Instructions
 

  • Chop tomatoes.
  • Cut the chicken into strips.
  • Mix garlic and olive oil with the chicken.
  • Sear the seasoned chicken in a skillet until medium cooked.
  • After 8-10 minutes, add the tomatoes, green peas and lettuce.
  • Simmer for 2 minutes and add quinoa.
  • Pour the chicken broth.
  • Stir and cook for 10-15 minutes until quinoa is cooked.
