Ingredients
  

  • 2 large bell peppers
  • 4 medium eggs
  • 1/8 cup spinach chopped
  • 4 oz mushroom sliced
  • cheddar optional, consume only once a week
  • 1 medium tomato diced
  • 1 tbsp basil leaves fresh, chopped
  • salt optional
  • 1 pinch black pepper ground
  • 1 tsp olive oil for glazing the baking tray

Instructions
 

  • Preheat oven to 375º F (190º C).
  • Cut the bell peppers in half through the stem. Leave the stem attached, but remove the seeds and membrane.
  • Glaze the baking tray with oil.
  • Place the bell peppers onto the baking tray.
  • Bake for 20 minutes.
  • After the bell peppers are half-cooked, crack a whole egg into each bell pepper half.
  • Season each bell pepper with a pinch of salt and ground black pepper.
  • Stuff each bell pepper half with tomato, spinach, basil, mushrooms, and cheddar cheese (optional).
  • Bake for an additional 15 minutes until the egg whites have set or until eggs are cooked according to preference.
  • Cool for 3 minutes.
