Ingredients
  

  • 1 cup lettuce Want to make it healthier? Rplace with kale or substitute half of the lettuce to kale and chop as small as you can
  • 3 medium tomatoes
  • 1 large cucumber
  • 1 medium bell pepper
  • 1 medium red onion
  • black olive optional
  • capers optional
  • 1 tsp white wine vinegar
  • 1 tbsp olive oil
  • salt optional
  • 5 oz fat free feta
  • 1 tbsp oregano

Instructions
 

  • Chop ingredients into desired size.
  • Put the lettuce into the mixing bowl.
  • Add the tomatoes, cucumbers, bell pepper, red onions, black olives and capers.
  • Pour the white wine vinegar and olive oil into the mixed vegetables.
  • Add salt, feta cheese and then oregano to taste.
